Ingredients

  • 4 slices bacon

  • 24 large clams

  • 4 tablespoons olive oil, divided

  • 1 tablespoon butter

  • ½ cup minced onion

  • ¼ cup chopped green bell pepper

  • 2 cloves garlic, minced

  • 1 cup dried bread crumbs

  • 2 tablespoons grated Parmesan cheese

  • ½ teaspoon dried oregano

  • 2 teaspoons dried parsley

  • ¼ teaspoon paprika

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Cook bacon in a medium skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate; crumble and set aside.

  3. Wash clams, then place on a baking sheet. Heat clams in the preheated oven until clams open, 1 to 2 minutes. Discard any clams that do not open. Remove meat from shells. Chop meat and set aside. Reserve shells.

  4. Increase oven temperature to 450 degrees F (230 degrees C).

  5. Heat 2 tablespoons olive oil and butter in a small skillet over medium heat. Sauté onion, pepper, and garlic in hot oil-butter until tender. Remove from heat and cool slightly.

  6. Mix together chopped clam meat, sautéed vegetables, bread crumbs, Parmesan, and oregano in a large bowl until well combined. Spoon mixture into shells and place on a baking sheet. Sprinkle with parsley and paprika. Drizzle with remaining 2 tablespoons olive oil.

  7. Bake in the preheated oven for 7 minutes. Serve hot.
